Crack… Bang… Boom! Happy Independence Day all my American peeps! Talk about firecrackers, these parfaits were for sure a party in my mouth! Now I know, nice cream has been done over and over, and if you’ve made it you understand why (because it’s so darn easy to make and is so freakin’ delicious). And if y’all haven’t made nice cream- well guurrlll, you’ve been missing out! But hey! You’re here now so let’s do this!

What is nice cream anyway? And no- it’s not a typo, haha. Basically, it’s frozen bananas + another frozen fruit (if you want) + vanilla extract + a splash of almond milk. Sometimes I add protein powder to mine too! That’s it! Genius, right? It’s a healthy alternative to ice cream, but the amazing part about nice cream is that you can have it for breakfast too! Score!

So what makes this nice cream better than others you ask?! Perfect question my friend. Well I’ve teamed up with Suncore Foods to bring you this crackilackin’ Triple Berry Chia Pudding Nice Cream Parfait! The really fun thing about my nice cream recipes lately is adding a super colorful superfood powder to give it a gorgeous color all-the-while boosting the nutritional value. For the blue layer in this parfait I used Blue Butterfly Pea Superjuice Powder and doesn’t it just make the most stunning blue hue?!

The next question you might have is, ‘What the heck is chia pudding?!’ Another great question. So I make mine with quality chia seeds, like these from Suncore Foods + maple syrup + vanilla extract + almond milk + a pinch of salt. Again- super simple. You stir everything together and store in your fridge overnight and taa-daa! Ready made pudding the next morning. Chia pudding is also great with fresh fruit and granola, nuts, coconut, etc… but I decided to add a layer of my favorite chia pudding in this Triple Berry Chia Pudding Nice Cream Parfait.

Chia Seeds
☆ gluten-free
☆ rich in vegetable protein
☆ rich in fiber
☆ contain essential omega-3 fatty acids
☆ hold the power to naturally improve metabolism

Blue Butterfly Pea Flower Superjuice Powder
☆ butterfly pea flowers wind themselves along trellises and the sides of buildings across Thailand and Myanmar
☆ improved eyesight
☆ aids in hair growth
☆ improved skin
☆ non-toxic, natural food coloring

Triple Berry Chia Pudding Nice Cream Parfaits

Triple Berry Chia Pudding Parfait

Yield: 2 large parfaits
Prep Time: 15 minutes
chill time: 1 hour
Total Time: 1 hour 15 minutes

Ingredients

Chia Pudding

  • 1 cup chia seeds, (I used black chia seeds from Suncore Foods)
  • 2 & 1/4 cup almond milk
  • 2 tsp vanilla extract
  • 4 tbsp maple syrup

Raspberry/Strawberry Nice Cream

  • 2 frozen bananas
  • 1/4-1/2 cup frozen raspberries/strawberries, (depending on how flavorful/red you want your nice cream)
  • 1-2 tbsp almond milk
  • 1 tsp vanilla extract

Blue Butterfly Pea Flower Nice Cream

  • 2 frozen bananas
  • 1 tbsp blue butterfly pea flower powder, (from Suncore Foods)
  • 1-2 tbsp almond milk
  • 1 tsp vanilla extract

Toppings

  • strawberries
  • raspberries
  • blueberries
  • pomegranate seeds, (optional)

Instructions

  1. ** A DAY BEFORE YOU PLAN ON MAKING THESE, freeze 4 bananas overnight and make your chia pudding the night before

Chia Pudding

  1. Make your chia pudding the night before for the ease. Whisk together all pudding ingredients, leave out on the counter for a few minutes and then whisk again. Cover and store in the fridge for at least 2 hours or overnight.
  2. **NOTE: you will probably have extra chia pudding leftover from this recipe, but then you can get 2 breakfasts out of one! Woohoo!

Rasberry/Strawberry Nice Cream

  1. Add your frozen bananas, frozen berries, vanilla, and almond milk to a high speed blender or food processor and blend until you achieve an ice cream-like consistency. You may have to stop and stir and re-blend to get the bananas fully blended
  2. **NOTE: add the almond milk little bits at a time. If you add too little it won't become smooth enough, and if you add too much you'll end up with a smoothie!
  3. Split them between 2 glasses and store in the freezer while you make the blue butterfly pea flower nice cream
  4. Add your frozen bananas, blue butterfly pea powder, vanilla, and almond milk to a high speed blender or food processor and blend until you achieve an ice cream-like consistency. You may have to stop and stir and re-blend to get the bananas fully blended
  5. **NOTE: add the almond milk little bits at a time. If you add too little it won't become smooth enough, and if you add too much you'll end up with a smoothie!
  6. Take your glasses out of the freezer, top the berry layer of nice cream with chia pudding, then top with blue butterfly pea flower nice cream and fresh berries!
