You’ll simply blend the pumpkin, vegan cream cheese, dates, maple syrup, vanilla, salt, pumpkin pie spice, and Fermented Aloe Booster Powder together in your blender and then add it to a bowl with your oats, almond flour, chia seeds, and cranberries, mix, chill, roll, and devour! One-bite cheesecake challenge accomplished *wink.

Pumpkin Cranberry Cheesecake Bites

Ingredients

  • 6 dates
  • 2 cups oats
  • 1/2 cup almond flour
  • 1/4 tsp pumpkin pie spice
  • 1/2 tbsp chia seeds
  • 1/4 cup 100% pumpkin puree (not pumpkin pie)
  • 1/4 cup vegan cream cheese
  • 1 tbsp maple syrup
  • 1 tsp pure vanilla extract
  • 1 serving New Chapter Fermented Aloe Booster Powder
  • 1/4 tsp salt
  • 1/4 cup dried cranberries

Instructions

  1. Boil 2 cups of water, then pour the water over your dates and let them soak while you prepare the rest 

  2. In a large bowl, combine your oates, almond flour, pumpkin pie spice, chia seeds, salt, and dried cranberries

  3. In a food processor/blender, blend the pumpkin, cream cheese, maple syrup, vanilla, salt, Fermented Aloe Powder until smooth. Then add the drained dates and blend once again until the dates are blended well

  4. Pour the mixture into the bowl with the oat mixture and using a spatula, stir until a batter forms

  5. Place the mixture into your fridge and let it chill for about 15 minutes

  6. Roll each ball (about 1 tbsp batter per ball) and either enjoy or chill to set up more. Store in an airtight glass container in your fridge for up to a few days
