In my version of crudo salad I’m letting the produce and @LaTourangelle Organic Extra Virgin Olive Oil shine and what a gorgeous salad this is indeed! [AD]

POLENTA CROUTONS! There’s a local restaurant her POLENTA CROUTONS! There’s a local restaurant here in Columbus that adds polenta croutons on their salad and it’s such a fun, delicious idea that I wanted to recreate my own version for the blog! These are so delish- I found myself even just snacking on them 😋

INGREDIENTS
18 oz (510g) ready-made polenta, cubed
1 tablespoon Italian seasoning
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup vegan parmesan cheese
1 tablespoon nutritional yeast
2-3 tablespoons oil (olive or avocado)

INGREDIENTS 
4 flax eggs (4 tablespoons ground flaxseed meal + 1/2 cup water)
1/2 cup tapioca starch
2 teaspoons baking powder
3/4 cup maple sugar* (may substitute with coconut sugar)
1 cup cooked quinoa
1 teaspoon pure vanilla extract
1 cup peanut butter (or other nut/seed butter)
1/2 cup dark chocolate chips

INSTRUCTIONS
Cook one serving of quinoa per package directions. I like to do this the night before and store it in an airtight container in the fridge overnight, but if you do it the same day just allow for about 15-20 minutes of additional time to make these cookies.
Preheat the oven to 350 degrees F. Make the flax eggs by combining the flaxseed meal and water together in a bowl and let it sit to 'gel up'.
In a large bowl, whisk together the tapioca starch, baking powder and maple sugar. Add the cooked quinoa, vanilla, peanut butter (or other nut/seed butter) and flax eggs to the bowl and mix until a batter forms, then fold in the chocolate chips.
Line a baking sheet with parchment paper, then using a large cookie scoop (about 2-3 heaping tablespoons of batter per cookie), scoop the cookie dough onto the baking sheet leaving a few inches in between cookies.
Bake the cookies for 15-20 minutes, they should just start to look golden- avoid over baking unless you like crunchier cookies.
Remove the cookies from the oven and let them cool for about 5 minutes, then using the back of a small bowl or measuring up gently flatten the cookies, not too flat. Let them cool to set up completely and then enjoy!
Keep them stored in an airtight container on your counter for up to 3 days.

INGREDIENTS
Frozen hash browns (I used Strong Roots Cauliflower Hash Browns!)
1-2 tablespoons olive/avocado oil
1-2 avocados, sliced/mashed
broccolini/broccoli florets
1 cup brussels sprouts, sliced in half
everything bagel seasoning
vegan parmesan cheese
microgreens

INSTRUCTIONS 
Make the hash browns according to package directions.
Heat a large skillet over medium heat. Add the oil. Sautee the broccoli and brussels sprouts, tossing occasionally until they are soft and tender, but not mushy, then set aside
Slice/mash your avocado.
Add the sliced/mashed avocado on top of the hash browns, then top with sauteed brussels sprouts and broccoli.
Sprinkle, to taste, everything bagel seasoning and vegan parmesan cheese over top.
Garnish with fresh microgreens.

This VEGAN MEXICAN STREET CORN SALAD is a fun spin This VEGAN MEXICAN STREET CORN SALAD is a fun spin on Mexican Street Corn! With a boost of complete protein from the quinoa and the delicious dairy-free dressing, this is sure to be on your summer picnic side dish rotation! I just love adding a boost of plant-based protein to this recipe! It also “bulks it up” so that it’s more filling (hello fiber!) and will serve more people. 😉 RECIPE BELOW!

Ingredients
1/2 cup quinoa, uncooked
3/4 cup water
1-2 tablespoons olive oil
2 cups corn (frozen, canned, or fresh)
1/3 cup red onion, diced
1 cup dairy-free feta cheese (or other non-dairy cheese, like Parmesan)
1/4 cup fresh cilantro minced, a few leaves left for garnish

The Dressing
1/4 cup mayonnaise
1/2 tablespoon apple cider vinegar
2 tablespoons lime juice, more for garnishing if desired
1/2 teaspoon cumin
1 teaspoon smoked paprika
1/4 teaspoon kosher salt
1/4 teaspoon cayenne pepper

Instructions
Boil 3/4 cup of water in a small saucepan and cook 1/2 cup of quinoa according to package directions, about 15 minutes until all the water is absorbed. While the quinoa is cooking, heat the olive oil in a large skillet medium high heat. Add the corn and saute until slightly charred, approximately 7-10 minutes. Transfer the corn to large bowl. Next, add the red onion, cilantro, and 1 cup of the cooked quinoa to the bowl. Mix to combine. In a seperate small bowl, add all dressing ingredients and whisk/stir until smooth. Pour the dressing into the bowl with the corn, toss to mix well. Add 1/2 of the dairy-free feta (or other dairy-free cheese of choice), mix. Let the salad cool for at least 10-15 minutes and then add the remaining half of the cheese and mix. Garnish with more fresh cilantro and feta and serve! You may make this salad a few hours ahead of time, just be sure to cover and chill until you're ready to serve.
