Raise your hand if you’re a sushi lover but don’t like real sushi, you know, the fishy kind… my hand’s up. So then naturally you head straight for that California Roll, which then after a while can get a little underwhelming, amiright?! So today, I bring you a fresh new take on sushi, without the fish, loaded with color, and in the shape of a doughnut! Most of us know we should be eating the rainbow to get a variety of vitamins and minerals, but it might be hard to get them all in one meal. That’s one of many reasons why I love this recipe. You’ll notice the range of colors in this dish, and not to mention, you’ll notice how simple it is to create. Did I mention they are in the shape of a doughnut?! What a better way to make eating healthy fun! Kiddos will love these, and you might just be able to trick them into trying a new veggie or two while you’re at it. That sounds like a win-win, donut?!
Rainbow Sushi Doughnuts
Ingredients
- 1 1/2 cups Calrose rice
- 2 cups water
- mango
- carrot
- green onion
- cucumber
- purple cabbage
- avocado
- sesame seeds , (regular, black or both)
- radish
- liquid aminos, (for dunking)
Instructions
- Cook the rice according to package directions (boil the water then add the rice), stirring occassionally
- While the rice is still warm (but not too hot), press the rice into a donut pan all the way to the top
- Cut your veggies while the donuts cool a bit
- Carefully remove the rice donuts from the pan, top with veggies + sesame seeds and serve with liquid aminos or tamari soy sauce
