I’m just going to be real with you… I am a pasta snob. There, I said it, Ha! When I found out I had Celiac Disease, I thought, how the heck is an Italian intolerant to pasta and bread! I am so grateful that gluten free pastas have come such a long way, where really you (well I) can’t even tell a difference *fist pump, high five! Getting off my pasta soap box, I wanted to try new ways to enjoy pasta other than with the traditional tomato sauce. This Mediterranean pasta features a hummus based sauce, wild, right?! It’s so fresh and light, and paired with spinach + kalamata olives, this dish is sure to be on your summer menu. Did I mention that it only takes 20 minutes to make? Chyaaa.. *fist pump… again
Mediterranean Pasta with Spinach + Artichokes + Kalamata Olives
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Ingredients
5 ounces plain hummus
1 can artichoke hearts (chopped)
5 ounces spinach
1 tbsp minced garlic
1/2 tsp Italian Seasoning
1/2 jar kalamata olives
salt
pepper
optional
1 cup reserved pasta water
Instructions
Cook your pasta according to package directions
Mix hummus, artichokes, garlic, olives, italian seasoning, salt + pepper together in a large bowl
Drain your pasta and add back to the same pot, add the spinach and hummus mixture and cook over low heat until the spinach starts to wilt (about 5 minutes)
