A perfect easy weeknight dinner gets a colorful boost with superfood powders! This deliciously creamy Cauliflower Rainbow Soup is made with sautéed cauliflower and potatoes, leek, blanched almonds, almond milk, and spices!

It’s soup season y’all! I forget how excited I get for soup every year. Not only because it’s comforting and warming, but because soup is so easy to make and their are tons of flavor combinations. This creamy cauliflower soup is deliciously rich, vegan, and gluten free and made with only 8 ingredients and then garnished with golden raisins and 6 superfood powders for a snazzy nutritional boost!

You may have noticed, I love colorful food. I suppose that’s the artist in me, how I express myself- I’ve always been in love with anything colorful. But I am also a huge advocate for healthy, naturally colored foods. No artificail dyes here at Healthy Little Vittles! That’s where my friends from Suncore Foods come in! In this Creamy Cauliflower Rainbow Soup recipe I sprinkled some of each of these Suncore Foods Supercolor Powders:

To make this recipe even simpler, I used my Vitamix A3500 Smart Blending System and it blends it to smooth perfection! BUT if you don’t have one, no worries! Just steam, blend, heat and maybe re-blend. It’s ok to have it be a little chunky. Then garnish with Suncore Foods supercolor powders, golden raisins (an amazing pairing with cauliflower by the way) and almond slivers. Dinner perfection.

Creamy Cauliflower Rainbow Soup

Yield: 4 people
Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes

A creamy blend of cauliflower, leek, and potato with plant milk and vegetable broth then topped with slivered almonds, golden raisins, and a variety of superfood powders to make one gorgeous, easy rainbow soup recipe!

Ingredients

Soup Ingredients

  • 24 oz cauliflower florets
  • 1 cup slivered, blanched almonds
  • 1 heaping cup potato, peeled and diced
  • 1/2 cup leek, diced (white part only)
  • 2.5 cups unsweetened almond milk (or other plant milk)
  • 1/2 cup vegetable broth
  • 1 tbsp grapeseed oil
  • 1/2 tsp salt

Garnishes

  • Suncore Foods Pink Pitaya Supercolor Powder
  • Suncore Foods Garnet Elderberry Supercolor Powder
  • Suncore Foods Blue Butterfly Pea Flower Supercolor Powder
  • Suncore Foods Emerald Pandan Leaf Supercolor Powder
  • Suncore Foods Sunglow Goji Berry Supercolor Powder
  • Suncore Foods Yellow Goldenberry Supercolor Powder
  • golden raisins
  • slivered blanched almonds
  • parsley, (opt)

Instructions

  1. In a large saucepan, steam your cauliflower and potato with a little bit of water on the bottom for about 15 minutes until soft
  2. Add almond milk, broth, olive oil, salt, leek, almonds, and the cauliflower potato mixture to your blender (in that order!) and blend on high until smooth. If you don't have a Vitamix A3500 machine, you may need to reheat and reblend
  3. Spoon your soup into bowls, sprinkle some of each supercolor powder, then garnish with golden raisins and slivered blanched almonds

Spray oil
1/2 cup coconut sugar
1 teaspoon cinnamon

Chocolate Dipping Sauce
1 cup dark chocolate chips
1 teaspoon coconut oil

Preheat the oven to 350 degrees F. Combine the almond milk and apple cider vinegar in a bowl and set aside for about 5 minutes to create a "buttermilk". In a large bowl, whisk together the flours, cinnamon, salt, baking powder, and baking soda. Add the maple syrup and the "buttermilk" to the bowl with the flour mixture and stir to form a batter. Scoop a heaping tablespoon of batter into your hands and roll into balls and then place into a greased donut hole baking pan (or you can use a parchment lined baking sheet if you don't have one). Repeat until all batter is gone and then bake in the oven for 13-14 minutes. Remove from the oven and allow them to cool completely. Next, make the cinnamon sugar coating by whisking together the coconut sugar and cinnamon in a bowl. Spray the donut holes all the way around with the spray oil and then roll them in the cinnamon sugar coating. Serve with melted chocolate if desired. Best enjoyed the same day, store leftovers in an airtight container on your counter for up to 2 days.

NAAN BUTTER CAULIFLOWER 🧡💙 This recipe is ad NAAN BUTTER CAULIFLOWER 🧡💙 This recipe is adapted from the Butter Chicken dish you might be familiar with. The sauce is so rich and flavorful made vegan with coconut milk, vegan butter, ginger, garlic, Garam Masala, curry powder, turmeric, and a touch of maple syrup. I added diced onion, chickpeas and diced tomatoes to the sauce too.

The naan breading is made with just 5 ingredients: almond flour, arrowroot powder, baking powder, dairy-free yogurt, salt, plus water, then you simply dip the cauliflower florets in the naan batter and bake in the oven for about 20 minutes until it starts to get crispy! While the naan cauliflower is baking, you make the sauce on the stovetop and then gently toss in the naan cauliflower and serve over rice! YUM!
