Spiced Apple Pie Overnight Oats with Vanilla Nice Cream + Tahini Caramel

OH.MY….. APPLE.PIE. Yes, this is breakfast my friends, and no, your eyes are not deceiving you. Everything about this should be making your mouth water. Just wait until you taste it! Talk about motivation to get up in the morning… I skipped coffee (what?!) and went straight for this cup of O (get it?! cup of O for Oats instead of Jo?! I crack myself up sometimes- and I’m probably the only one laughing but that’s ok…) Anyway, so you literally put all the ingredients in a mason jar, shake it up (with the lid on of course!) and then place it in your fridge overnight. You could simply eat the oats plain, however, I HIGHLY recommend adding the vanilla nice cream and caramel. AND even more amazing, my vanilla nice cream has protein powder in it and only requires 4 ingredients! I’m not joking guys. The tahini caramel sauce only has 4 ingredients as well, with tahini as the base (!!!) and you could easily prepare this the night before as well. My hubby was insanely jealous when I showed him what he was missing out on this morning. Apple anything is kinda like his thing. Lucky for him because I am so kind (and have some self control) I saved him some and he’s about to be in for a real treat when he gets home from work! This was delicious enough, you could have this as a dessert too- but don’t feel guilty if you eat it ALL for breakfast…

Spiced Apple Pie Overnight Oats with Vanilla Nice Cream + Tahini Caramel

Ingredients

Spiced Apple Pie Overnight Oats

  • 1 cup oats
  • 1 1/4 cup almond milk
  • 1 tsp pumpkin pie spice
  • 1/2 tsp pure vanilla extract
  • 1/2 apple (diced into small chunks)

Optional

  • apple slices (for topping)
  • chopped walnuts (for topping)

Vanilla Protein Nice Cream

  • 2 frozen bananas
  • 1 tsp pure vanilla extract
  • 1/2 scoop vanilla flavored protein powder (I used Vega)
  • a splash or two almond milk

Tahini Caramel Sauce

  • 1/2 cup tahini
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil
  • pinch salt

Instructions

  1. Combine all the oats ingredients in a mason jar, cover and shake until well combined. Store overnight in your fridge

Tahini Caramel Sauce

  1. In a small sauce pan, melt all ingredients together over medium heat, whisking constantly. As the mixture heats up it will thicken up. Heat until you achieve desired consistency

Vanilla Protein Nice Cream

  1. In a high speed blender, add all the nice cream ingredients and blend until smooth adding splashes of almond milk as needed (but not too much!)

Serving

  1. Scoop out some of the oatmeal into a bowl or another jar/mug, plop some nice cream in there, drizzle with caramel and fresh apple slices and walnuts!
