Pumpkin Pie Toasts

Ok, so it’s no secret that we are all obsessing over pumpkin right now. It’s pumpkin spice everything, and I am totally on board, because, well, I love it just as much as the rest of you, but did you know there are also some great health benefits to this yummy orange goopy goodness? Pumpkin is:

  • High in vitamin A, which keeps that eyesight sharp
  • High in fiber, helping to keep things movin’ and groovin’ and may aid in shedding a few extra pounds
  • High in potassium, and a little extra potassium helps restore the body’s balance of electrolytes (like after a heavy workout) and keeps muscles functioning at their best
  • High in vitamin C, perhaps helping to kick that cold to the curb faster
  • High in beta-carotene playing a role in cancer prevention + helps protect us from the sun’s wrinkle-causing UV rays

Today I started my day off with this 4-ingredient Pumpkin Pie Toast. Now before you get all hung up on the pumpkin pie part of it, let me explain. I toasted up some gluten free bread, slathered it with organic canned pumpkin puree (NOT the pre-canned pumpkin pie mix), drizzled my pumpkin spice tahini caramel over top, and garnished it with some raw pecan pieces. When I took the first bite, I was like, omg, this tastes like pumpkin pie- except it’s breakfast! And who doesn’t want pumpkin pie for breakfast?! I took a poll on Instagram if y’all wanted me to share this recipe with you, and had an overwhelming response for yes which I wasn’t all that surprised by. So to all my pumpkin loving fall enthusiasts, this one’s for you!

Pumpkin Pie Toasts

  • gluten free bread
  • canned pumpkin puree
  • raw pecans
  • pumpkin spice caramel (recipe below)

Pumpkin Spice Caramel

  • 1/2 cup tahini
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil
  • 1/2 tsp pumpkin pie spice


Pumpkin Spice Caramel

  1. In a small sauce pan, melt all ingredients together over medium heat, whisking constantly. As the mixture heats up it will thicken up. Heat until you achieve desired consistency


  1. Toast your toast + slather with pumpkin puree + drizzle with caramel + garnish with pecans
