Peanut Butter Banana Flax Bites

Breakfast. I love breakfast foods… but quite honestly, it’s the hardest meal for me to plan (especially now that my little guy comes first). Breakfast is such an important way to start your day, so making these little gems the night before is SUPER helpful. I just make myself a cup of (decaf) coffee and grab a couple of these (ok, maybe more than a couple!) and I have myself a nutrient dense + easy peasy breakfast. #winning

Peanut Butter Banana Flax Bites

Ingredients

  • 1 tsp pure vanilla extract
  • 1 tbsp coconut oil (melted)
  • 1/4 cup flaxseed meal
  • 1 cup gluten free oats
  • 1/3 cup Enjoy Life chocolate chips
  • 1 tbsp chia seeds
  • 1/2 cup unsweetened coconut flakes
  • 1/4 cup peanut butter

Instructions

  1. Blend together the banana, vanilla, dates, and melted coconut oil until smooth

  2. Place the blended "batter" in a large bowl, add the remaining ingredients and stir to combine

  3. Let the mixture chill in the fridge for about 10-15 minutes

  4. Roll into balls (whatever size you like)

  5. Store in an airtight container in the fridge
