Peach + Honey + Thyme Smoothie Bowl

Well, I was busy traveling out of town unexpectedly on National Ice Cream day this past weekend, and had plans of posting this as a nice cream recipe… but then it turned into a smoothie recipe! You could eat this as nice cream, but woke up feeling in the mood for a smoothie, and although I could eat nice cream for breakfast, making it in smoothie form made my conscience feel just a tad bit better, haha. I don’t know about you, but anything with peach is just peachy to me! Oh and I should mention, nice cream isn’t a typo. If you’re not familiar with the term, let me introduce you.  Nice cream is homemade ice cream with its base ingredient being frozen bananas. It’s usually vegan and a healthier version of the dairy and sugar filled treat. You’ll be surprised at how delightfully tasty it is (not to mention how easy it is to make!). Alright, so I think it’s thyme we just get right to it! (wink)

Peach + Honey + Thyme Smoothie Bowl

  • 3 frozen bananas
  • 2 cups frozen peaches
  • 1 cup coconut milk (full fat)
  • 1/2 cup honey (may substitute maple syrup if vegan)
  • 7 sprigs fresh thyme
  • 1/3 cup orange juice

Optional Toppings

  • almonds
  • fresh sliced peaches
  • unsweetened coconut flakes


  1. In a small saucepan, whisk the coconut milk + honey together and bring to a boil 

  2. Once boiling, reduce the heat to simmer and add the thyme sprigs. Simmer for about 10 minutes

  3. In a blender, blend together the frozen bananas + peaches + orange juice + coconut milk syrup (removing the thyme sprigs first). Blend until smooth

  4. At this point you can either transfer the mixture to your ice cream maker (if you have one to make it into nice cream form) and if you don't, transfer the mixture to a loaf pan lined with parchment paper and place in the freezer until the desired texture is reached
