So today was another growth spurt day, and boy do I find these days challenging to make healthy meals… between nursing and crying (and him wanting to be around mommy 24-7) it is nearly impossible to brush my teeth let alone cook a meal, but I managed to do both today somehow. My hair, well that’s another story lol. I’m so grateful for blogs like Minimalist Baker’s, who provide plant based meals that are delicious and super easy to whip up. We had the Garlicky Kale Salad with (semi) Crispy Chickpeas and wowsa! This is going to be a new family staple. I added fresh, organic strawberries to brighten it up a bit, which made a great addition! I also didn’t follow the recipe exactly with how much garlic to use, nor did I roast it to make this recipe that much quicker. I made some garlic + “parmesan” flatbread to go along with it, which was just simply a delicious addition. You’ve gotta try it!
