Honey Cinnamon Oatmeal with Kiwi + Raspberries + Almonds

I just so happened to have this for lunch today because, well, by the time I got around to eating breakfast having a six month old, it was lunch time. Not an every day practice… I mean, it is Monday (insert wide-eyed emoji). Needless to say, it was just as scrumptious and filling at lunch as it would be breakfast- so I might just have to make this again tomorrow morning. I loved the cinnamon oats paired with the sweetness of the kiwi + raspberries. I wasn’t sure how the cacao nibs were going to pair with this dish, but it actually made the perfect finishing touch.  Any time I can add some cacao nibs to a meal, I do it because of the tremendous health benefits they have. When eaten raw, they are some of the most rich high-antioxidant foods around thanks to phytonutrients helping absorb the free radicals that cause damage in the body. You can read more in this article from Dr. Axe. This oatmeal literally takes less than 10 minutes to make too, so no more excuses for skipping breakfast! (finger pointing at myself!) Honey Cinnamon Oatmeal with Kiwi + Raspberries + Almonds

Servings: 1
Prep time: 10 min

Ingredients

  • 1 cup gluten free oats
  • 2 cups water
  • 1/2 tsp cinnamon
  • 1 kiwi
  • handful raspberries
  • handful almonds
  • 1 tbsp cacao nibs
  • 1 tbsp honey

Instructions

  1. Boil 2 cups of water, then add the 1 cup of oats and cook for 3-5 minutes, stirring frequently

  2. Add the cinnamon and honey to the pot, stir

  3. Pour the oats into a bowl and top with the remaining ingredients
