Great Greens Pasta

There are just some nights that I don’t have a lot of time to spend in the kitchen, well, if I am honest… that’s most nights, so I am super grateful for dishes like this one- that is healthy AND easy. You can put whatever green goodies you want in this dish, but I was trying to use up some of my produce before it went bad and it turned out that I loved it so much, it deserved its own post. So let’s get greening!

Great Greens Pasta

Ingredients

  • 2 tbsp olive oil
  • 1 tbsp minced garlic
  • 1 head broccoli
  • 1/2 red onion (sliced)
  • 1 can chickpeas (garbanzo beans)
  • 1 cup peas (frozen)
  • 5 stalks kale (chopped)
  • 1/4 cup basil leaves (packed + diced)
  • 2 large handfuls arugula
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/3 cup Earth Balance butter
  • 1/3 cup nutritional yeast
  • vegan parmesan cheese (for topping)
  • 12 ounces gluten free pasta

Instructions

  1. Cook the pasta according to package directions

  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sautee until fragrant (a few minutes)

  3. Add the red onion and cook until translucent 

  4. Add the broccoli and sautee for a few minutes, then stir in the chickpeas

  5. Let that cook together for a few minutes, stirring often. Add the peas + basil + kale + salt + pepper and sautee for about 5-7 minutes more, stirring occasionally

  6. When the pasta is done cooking, drain and add to the skillet with the sauteed vegetables

  7. Add the butter and nutritional yeast

  8. Right before serving, add the arugula and toss all ingredients to combine

  9. Top with vegan parmesan cheese (recipe below)

Notes

** VEGAN PARMESAN "CHEESE"

1 1/2 cup raw cashews
6 tbsp nutritional yeast
1 1/2 tsp salt
1/2 tsp garlic powder

Blend all ingredients together until well combined and obtain a parmesan cheese consistency.
