Fruit Spring Rolls with Chocolate + Caramel Sauce

Summer is for sweet treats and healthy eats, like these colorful + refreshing fruit spring rolls. The fun thing about these is you can put whatever you’d like in them and it’s super fun to have the kiddos help with. I filled mine with strawberries, plum, kiwi, blueberry, pomegranate seeds, and mint leaves. You can make these for breakfast, for dessert, or as a snack (which makes these little gems all the more awesome). Oh and if you need one more perk… they only take about 15 minutes to make (depending on how many you make). #winner What will you be filling your summer spring rolls with?! Fruit Spring Rolls with Chocolate + Caramel Sauce

Course: Breakfast, Dessert, Snack
Prep time: 15 min

Ingredients

  • spring roll wrappers
  • strawberries
  • blueberries
  • pomegranate seeds
  • plum(s)
  • kiwi(s)
  • mint leaves
  • chocolate sauce * see below
  • caramel sauce * see below

Chocolate Sauce

  • 1/4 cup Enjoy Life chocolate chips
  • 1 tbsp coconut oil

Caramel Sauce

  • 1/2 cup tahini
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil
  • pinch salt

Instructions

  1. Fill a large bowl with warm water. For each spring roll wrap, you will need to soak each wrapper until it becomes soft + translucent + "jelly"

  2. Place the softened wrapper as flat as possible on a large cutting board (or plate)

  3. Fill each wrapper with desired fillings. Place the fillings in the middle of the wrapper leaving a couple of inches on the right + left sides

  4. Fold the right + left sides over the fillings (not pulling too hard to prevent from tearing the wrapper). Next, fold the side closest to you over the fillings, and then in a tucking + rolling motion, roll the rest of the wrap rolling upward (away from you)

  5. Repeat for all rolls, and drizzle with chocolate sauce + caramel. You can also dunk 😉
