Figgy Curd Parfait

Breakfast is something that I struggle with, because it seems like all my options, my traditional breakfast food options, contain eggs, gluten, meat, or dairy (or all the above). So I am always trying to come up with healthier, more unique breakfasts because it’s really important to eat a good breakfast. This figgy curd parfait is made from the same filling that is in my Figgy Curd Tarts and is nutritious and delicious! It’s naturally sweetened with maple syrup and only requires 5 ingredients! I topped mine with cashew cream, but you could certainly skip this topping and add fresh fruit + nuts instead. Either way you have it, you’ll be really figgin’ glad you made this (high five!) For an even easier breakfast, make the night before, cover and chill then just grab-n-go!

Figgy Curd Parfait

Ingredients

  • 1 can coconut cream
  • 1 cup dried figs
  • 2 tbsp maple syrup
  • 2 tbsp arrowroot flour/powder/starch
  • 1/4 cup almond milk

  • figs
  • nuts
  • fresh fruit
  • cashew cream (recipe below)

Cashew Cream

  • 2 cups raw cashews (soaked in water overnight)
  • 1 tbsp lemon juice
  • 4 tbsp maple syrup
  • 6 tbsp almond milk
  • 1 tsp vanilla extract

Instructions

Figgy Curd

  1. In a medium saucepan, bring your coconut cream to a bubble (not fully boiling) over medium heat, whisking frequently 

  2. Blend together your dried figs and almond milk until smooth

  3. Add the fig mixture + maple syrup to the saucepan and whisk well to combine

  4. Whisk in the arrowroot until dissolved. It's ok if there are small lumps, we will be blending the mixture again to smooth it out

  5. Let the mixture simmer for 8-10 minutes

  6. Remove from heat and let it cool for about 10 minutes while you make the cashew cream (if making)

  7. After it cools, add it to a blender and blend until smooth(er)

  8. Place in the fridge overnight for breakfast the next morning! Top with cashew cream + toppings

Cashew Cream

  1. Drain + rinse your cashews

  2. Blend all ingredients together until smooth

  3. Cover and store in fridge
