Fancy Schmancy Rice Cakes

I had so much fun creating these delectable rice cake snacks. They combine savory + sweet toppings to keep your tastebuds happy and are filled with fiber + protein + healthy fats to keep your tummy from screaming. You can make these for breakfast + lunch + snack and are super fun and easy for the kiddos to enjoy. Pack the fixin’s in their lunch bags and let them have fun putting them together 🙂 (and let’s be honest, us adults will be having fun with these too). So, let’s do this fancy schmancy thang!

tahini
salt

Strawberry + Kiwi + Hazelnut Butter Rice Cake

Course: Breakfast, Snack
Cuisine: American
Servings: 1 rice cake
Prep time: 5 min

Ingredients

  • 2 Strawberries (sliced)
  • 1 Kiwi (peeled + sliced)
  • 1 tbsp hazelnut butter

Instructions

  1. Spread the hazelnut butter on the rice cake, top with strawberries and kiwi

  2. Eat + Repeat!

Peanut Butter + Banana + Granola Rice Cake

Course: Breakfast, Snack
Servings: 1 Rice Cake
Prep time: 5 min

Ingredients

  • 1 rice cake
  • 1/2 banana
  • 1 tbsp peanut butter
  • granola

Optional Topping

  • drizzled honey

Instructions

  1. Spread the peanut butter over the rice cake, add sliced banana and granola. Drizzle with honey if using

  2. Eat + Repeat!

Hummus + Veggie Rice Cake

Course: Appetizer, Snack
Cuisine: Mediterranean
Servings: 1 Rice Cake
Prep time: 5 min

Ingredients

  • 1-2 tbsp hummus
  • carrots (sliced)
  • cucumber (sliced)
  • red, green, yellow, orange pepper (sliced)

Instructions

  1. Spread the hummus over the rice cake + top with desired veggies

  2. Eat + Repeat!

Notes

** You can buy already made hummus, or whip up some of my Easy Lemony Hummus

Smashed Avocado + Tomato + Basil Rice Cake

Course: Appetizer, Snack
Cuisine: American
Servings: 1 Rice Cake
Prep time: 5 min

Ingredients

  • 3-5 cherry tomatoes (sliced)
  • 1/2 avocado (smashed)

Optional (but recommended)

  • 1 tbsp vegan parmesan cheese ** See notes for recipe

Instructions

  1. Smash the avocado and spread it over the rice cake. Top with sliced tomatoes + basil. Sprinkle with parmesan cheese

Notes

** VEGAN PARMESAN "CHEESE"

1 1/2 cup raw cashews
6 tbsp nutritional yeast
1 1/2 tsp salt
1/2 tsp garlic powder

Blend all ingredients together until well combined and obtain a parmesan cheese consistency.
