Caramelized Peach + Red Onion Pizza with Arugula + Almond Ricotta

THIS. This is all you need this summer. I forgot how flippin’ good this is until I made it tonight. It gives me alllll the feels. The sweetness of the peaches paired with the balsamic caramelized onions makes for one delectable match made in pizza heaven. And don’t skip the Kite Hill Ricotta (check your local Whole Foods)… it is truly a nice addition. I could probably eat the whole container by itself in one sitting. And even better, this meal only takes thirty minutes! Ya, I know… right?! Enjoy, my pizza party people!

 

 

Carmelized Peach + Red Onion Pizza with Arugula + Almond Ricotta

Ingredients

  • 3 peaches (sliced)
  • 1 red onion (sliced thin)
  • 1 handful arugula
  • 1/2 container Kite Hill Almond Ricotta
  • 1 tbsp balsamic vinegar
  • 2 tbsp honey (or maple syrup if vegan)
  • 1 tsp minced garlic
  • olive oil
  • salt + pepper (to taste)

optional topping

  • 4-5 slices bacon

PIZZA CRUST

  • 3 cups Bob's Redmill Gluten Free 1-to-1 Baking Flour
  • 3/4 tsp xanthan gum
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 2 tbsp date sugar (or regular if you don't have date sugar)
  • 1 packet instant active yeast
  • 1 tbsp olive oil
  • 1 1/4 cup hot water

Instructions

  1. Preheat the oven to 450 degrees

PIZZA CRUST

  1. Dissolve the yeast in the hot water (I put the hot water in the microwave for a couple minutes)

  2. Mix all other crust ingredients together in a large mixing bowl

  3. Knead it into dough with your hands, adding water or flour to obtain a dough-like consistency

  4. Roll out the dough (I use a baking sheet for a rectangular shaped pizza, but feel free to make a circular pizza). Then put parchment paper over your baking sheet/pizza pan and transfer the crust to bake

  5. Drizzle the crust with olive oil

  6. Spread 1 tsp minced garlic on the crust

  7. Bake for 20 minutes

TOPPINGS

  1. Slice the peaches + onion

  2. In a large skillet, heat 1 tbsp olive oil over medium heat and add the onions. Cook for about 20 minutes (or until brown)

  3. Add the peaches to the onions, along with the honey + balsamic vinegar. Sprinkle with a little salt + pepper

  4. Remove the crust from the oven

  5. Add peaches + onions + almond ricotta onto the crust and place in the oven and increase the oven heat to broil. Broil for about 5 more minutes (watching to make sure it doesn't burn

  6. Top with fresh arugula

optional topping

  1. If not vegetarian/vegan, bacon is wonderful on this! Cook the bacon according to package directions and crumble on top of the flatbreads along with the rest of the toppings
