Peanut Butter Banana Breakfast Cookies

Getting a breakfast meal ready the night before is key for me. Breakfast inevitably seems to be the hardest meal for me to be creative with, but these Peanut Butter Banana Breakfast Cookies are so so good, easy to make, delicious, and despite calling them cookies, really healthy! AND aside from the awesomeness of making them the night before and having them for a couple days (yes, for me only a couple days… because, well I’m a cookie monster! haha) you can make them the night before and have one for dessert because of the hint of sweetness they have. To sum it up, these cookies are da bomb!

Peanut Butter Banana Breakfast Cookies

  • 2 cups oats
  • 1/2 tsp salt
  • 1 cup creamy peanut butter
  • 1/2 tsp cinnamon
  • 1/4 cup honey
  • 1/4 cup unsweetened applesauce *see notes!
  • raisins (however many to your liking)


  1. Preheat the oven to 350 degrees

  2. Blend all ingredients except for the oats + raisins in a blender until smooth

  3. Pour batter into a medium bowl

  4. Stir in the oats + raisins 

  5. Grease a baking sheet (with spray coconut oil) OR use parchment paper 

  6. Form the batter into the size cookies you'd like (I like mine a bit larger because one is never enough!)

  7. Bake for approximately 15 minutes or until the bottoms of the cookies start to turn golden brown

  8. Store in an airtight container either on your countertop or in the fridge


* I buy the 6-pack of individual cups of applesauce (the snacking cups) and use one of those in my recipe as a pre-measured ingredient to make my life just a tad bit easier 🙂
